My Favorite Recipe

As a single person, it is very difficult to create a variety of fresh meals each week. I understand the importance of meal prepping, but the problem is that you have to eat the same thing all week. I am okay with leftovers, but it is healthier to have a variety of foods each week to make sure that I am getting all of my nutrients.

To solve this problem, I have been working on figuring out a way to meal prep a variety of meals each week instead of one week of the same meal. I decided to just focus on one day and decided Tuesday would be the day since it is already the unofficial day for tacos. I decided on two recipes from one of my favorite food bloggers, Salt and Lavender: Low-Carb Taco Bowls and Low-Card Taco Salad.

The Meal Plan

Each recipe makes four servings: that is four weeks of Taco Tuesday meals for me, eight if I make enough for both recipes.

I never cook beef, just chicken and fish, which is why I am going to for this meal plan. Later on, I will swap it out for ground turkey and then expand into fish and shrimp, but for now, ground beef it is.

I will cook the beef only and then freeze the extra in individual servings to be taken out and thawed on Tuesdays. Then on Tuesdays, I will only have to prepare the fresh ingredients to add to the reheated beef. Even better is that the seasonings for the beef is the same for both the taco bowls and the taco salad, so I could prepare either meal. Or I could have the taco bowl one day and taco salad the next day or another day that same week, which is probably what I will do.

Now all I have to do is find two chicken recipes and two fish recipes to round out the week. If I follow the same process of cooking the protein all on one day then freeze it into individual portions I will have prepped a full week of a variety of meals.

    Great tips on meal preparation and planning for variety! I don’t mind eating variations of the same dish all week, but it’s nice to know different strategies so we don’t get stuck in a pattern due to convenience.

  3. What a fun post. Very enjoyable to read. My favorite chicken meal prep is chipotle chicken and rice. I embedded the video in my latest blog post on meal prep. If you prefer low-carb, you can replace the rice with cauliflower rice or just add more protein and veggies.
