Healthy Summer Recipes

Health is one of the 10 virtues of the Proverbs 31 Woman. Since she takes care of her body by making healthy meals for herself and for her loved ones, in this post, I share some healthy summer recipes to try. Preparing healthy meals may be of more importance to you after a year of restrictions have limited our levels of activity!

My favorite part of summer eating is that–after months of being confined to apples, oranges, pears, and grapes–many other fruits come into season: cherries, plums, and watermelon, just to name a few. Some other produce that is in season during the summer include corn, tomatoes, and zucchini. What’s in season should be a top consideration when planning any meal, but with summer comes warmer days and a less willingness to slave over a hot stove, so I have kept that in mind for these healthy summer meal ideas below.

Breakfast Ideas

Smoothie or smoothie bowl. The benefits of the smoothie is that it is quick and easy to make, and you can take it on the go. The benefit of the smoothie bowl is that it gives you the opportunity to add more nutrients through the toppings you add such as nuts, seeds, or granola. A smoothie bowl, however, is more time-consuming to prepare and to eat.

If you want more of a meal, go with a smoothie bowl. If you want a quick breakfast, make a traditional smoothie. Whether you choose to go with a smoothie or to try a smoothie bowl, you can add protein to either and even collagen for some extra anti-aging benefits!

Lunch Ideas

Salad or a bowl. I enjoy bowls more, but they are both good options. The benefits of both the salad and the bowl as that either can be meal-prepped and stored in your refrigerator until you are ready to eat. Mason jars are a great for meal prepping salads, as I mentioned in a previous post.

Since smoothie bowls are a more filling breakfast, you may want to pair it with a salad for lunch. And since bowls tend to be more filling than salads, you may prefer to have one on days when you have the lighter smoothie for breakfast.

Dinner Ideas

Anything grilled works here. Grilled chicken, fish, shrimp, or steak can be used to meal prep salads and bowls for the week. They each also make great fillings for Taco Tuesday! You can also make steak or shrimp kabobs or grill sides, such as corn on the cob. Here is a versatile Cajun spice rub that you might want to try.

Snacks/Desserts

Anything with fruit! My favorite is fruit salad, but there are also some real fruit popsicles that would be perfect, too. What’s summer without ice cream or popsicles, right? Try making your own of either for healthier versions, such as this frozen banana ice cream.

Other options of healthy snacks and desserts include sorbets, watermelon fries, or angel food cake cups filled with berries and lightly sweetened whipped cream.

Other Healthy Summer Menu Ideas

For summer entertaining, grill lobster tails to go along with your grilled steak and serve with some grilled vegetables and corn.

Utilize those mason jar salads for trips to the beach, a picnic in the park, or even for road trips.

In late summer, use up your remaining corn to make some homemade crab cakes.

Invest in a blender, an indoor grill, and a vegetable spiralizer. In addition to the blender being used to make your smoothies and smoothie bowls, you can also use it to blend frozen bananas into the healthy ice cream I mentioned above. The indoor grill can be used if you don’t have an outdoor grill as a healthier way to prepare chicken, fish, shrimp, or steak. And the vegetable spiralizer can be used to make zucchini noodles for a low-carb pasta dish. This vegetable spiralizer by Ayesha Curry is also a mandoline. There are only a few left, at last check, FYI.

You might also want to invest in a Zoku Slush & Shake Maker to make your own healthy slushes with real fruit juices, or in a set of summer dinnerware for dining out on your patio, one of my favorite things to do.
