While the best part of fall to me is Thanksgiving, and when the leaves change into their pretty fall colors, yet another thing I like about this season are all of the fall flavors.  When I think of fall recipes, I think of heartier meals compared to the light and refreshing ones of summer.  However, I always keep Thanksgiving in mind, not wanting to overdo it leading up to the feast.  Because of this, I try to find healthy fall recipes, lighter versions of classic fall dishes.  This is what I found this year.

Healthy Breakfast Ideas

Pancakes or waffles.  We don’t usually think of these as being healthy, but they absolutely can be, such as these Healthy Pumpkin Pancakes (pictured). What I like about these are that they are quick and easy enough to prepare during the week. 

And the benefit of these Yogurt Waffles is that not only are they healthy, but you can meal prep them and use a variety of toppings for a whole new breakfast each time.  Try them with pure maple syrup and mixed berries or with healing Manuka honey; drizzled with peanut butter and sliced bananas; or topped with yogurt whipped cream and fresh berries.  Make an extra batch to store in your freezer and reheat in the toaster.

Oatmeal.  I am not an oatmeal person, but I may make a version of this Baked Oatmeal Recipe.  It is made with pears, bananas, and walnuts.  The benefit of this recipe is that you can meal prep it.  After baking it, slice it into portions and refrigerate until ready to eat.  Then heat it up in the microwave and serve with Greek yogurt, if you’d like. 

Eggs.  There are a lot of healthy egg recipes out there, especially ones that you can meal prep.  What I like about the Omelet Tortilla Breakfast Wrap is that it can be eaten on the go; it is an omelet wrapped in a tortilla like a burrito!  Fill it with all of your favorite omelet fixings.

A bowl.  Bowls have become one of my favorite meals because there are so many types of bowls you can make.  Another great thing about bowls is that they can be meal prepped.  This Turkey Chorizo Breakfast Bowl is no exception, and with all bowls, you can swap out the ingredients to ones more of your liking.

If it is still warm where you are in the fall like it is where I am, you may want to try this Healthy Pumpkin Pie Smoothie (pictured).  It is naturally sweetened and made with all of those wonderful fall spices. Or you can even try these Pumpkin Pie Breakfast Popsicles. They can be meal prepped, eaten on the go, and sound like a delicious way to get in yogurt. 



Healthy Lunch Ideas

Salad.  The Harvest Fall Salad (pictured) is hearty enough for lunch.  It is made with fresh greens, Autumn fruit, bacon, feta cheese, and a wonderful sounding cider dressing. Another option is the Kale and Butternut Squash Salad with Pears and Almonds.

Soup.  As the weather gets cooler, soup is a great lunch choice.  Make a big batch and have it for lunch all week.  This Sausage and Sweet Potato Soup is versatile.  You can use mild or spicy Italian sausage, can add or swap out the veggies for different ones, and you can serve it alone or with a crusty bread to make it more of a meal.

Have either of the above alone or with a sandwich.  This Turkey Club is made healthier by using less bread, two slices instead of the traditional three.  You can also use a tortilla or lettuce instead of bread to make a lower carb wrap.

Meal Prep Bowls.  These healthy Southwest Sweet Potato Vegan Meal Prep Bowls are perfect for fall.  They can be eaten cold or reheated.  You can add brown rice to it, or eat it as is, if you’d like.

Healthy Dinner Ideas

Chili.  When fall arrives, I love to make chili.  There are many different types of chili recipes out there.  So far, I have only made white chicken chili.  This year, I would like to try this Easy Vegan Chili Recipe.  The benefit of this recipe is that you can add protein of any source to meet your dietary preferences.  Top with avocado and serve with tortilla chips for the vegan option.

Sweet and Spicy Glazed Salmon is a simple recipe, made with only five ingredients and a lot of flavor.  Serve with roasted or steamed veggies and with steamed or brown rice.

Slow Cooker Chicken Tacos. Keep them healthy by topping with cabbage slaw and avocado.

Instant Pot Spaghetti and Turkey Meatballs.  Make traditional spaghetti and meatballs healthier with whole wheat pasta.

Snacks and Desserts

Fall brings baking to mind, especially when I think of snacks and desserts!  To keep snack time healthy this fall, these Pumpkin Spice Latte Protein Bars may be the answer.  The skinny version of the Starbucks drink, though not a coffee drinker, I may give these protein bars a try.

It turns out, there were several healthy fall desserts out there.  Here are a couple: These Skinny Pumpkin Snickerdoodles (pictured) sound delicious!  They are lighter than traditional snickerdoodles and have added fiber.  And these Healthy Maple Glazed Pumpkin Cookies are made with extra protein.  Top them with toasted pecans for extra flavor.


Other Fall Menu Ideas

  2. Breakfast is my favourite meal of the day, and those pumpkin pancakes look like something I need to add to my fall recipe collection. It’s that time of year! I am not a huge fan of oatmeal either, but there is something about baked oatmeal that makes it delicious. I recommend a try!
